What is HACCP?

HACCP is an abbreviation of Hazard Analysis Critical Control Point. It relates to food safety and involves actively promoting methods of hazard prevention.

In a food factory, you will find HACCP being used in all aspects of food manufacturing, from development to production and packaging to distribution.

HACCP should not be confused with post-production testing. HACCP involves ensuring safety is maximised and that hazards are minimised at all stages of the food production process, whilst post-production testing involves manufacturing a product and then testing afterwards. This is an unsuitable method of hazard prevention for food manufacturing due to its high perishability. As a result, the HACCP principle has been widely adopted throughout the global food industry.

The FDA (Food and Drug Administration) introduced a number of HACCP initiatives into food and pharmaceutical production factories to protect the general public from any hazards that may occur during production of these necessity products. These HACCP are not compulsory in all food production categories, just meat and juice.
