Vegetarian Mozzarella launches in the UK
The first vegetarian mozzarella has been launched in the UK by Traditionally Mozzarella di bufala Campana (D.O.P, denominazione di origine protetta).
The traditional Italian cheese is made using a 900 year old method in the Campana region of Italy by a family company. Mozzarella usually relies on animal rennet to set the cheese, which is obtained from the stomach tissue of newborn calves. The new Belmosa Mozzarella uses vegetable rennet so that the cheese is totally free from animal product, although it has the same texture as traditional mozzarella.
The vegetarian Belmosa Mozzarella is marketed as a healthy option because it has a much lower cholesterol level than normal mozzarella. Traditional mozzarella is low in cholesterol anyway because it is made with buffalo milk. It is also rich in calcium, iron and Vitamin A.
Italian chef Aldo Zilli, who has created a series of classic recipes which are available on the packaging, commented:
"Mozzarella Belmosa di Latte di Bufala is a truly delicious mozzarella that tastes great whether you are vegetarian or not. It is full of the authentic goodness of mozzarella that I grew up with, and has delicate herbal notes and a wonderful creamy texture.
"Using vegetable rennet does not compromise on taste but it does make a healthier and more ethical product that can be used in so many different dishes."
